So, pizza is kind of our thing. We eat it all the time. Seriously. Unfortunately, I don’t make pizza as nearly as often as I should. It’s one of those go-to, end of the week meals when I am tired and I don’t feel like cooking. Especially when I know there are still so many things to do with the kids over the weekend. And, my kids are a bit particular about their pizzas. They like the whole pepperoni-cheese thing. Sure, I like that as well, but I like to try different kinds as well. Locally, there isn’t a whole lot to choose from. So, if I want to experiment with flavors, I have to make it myself. This particular recipe, I have had saved for quite a long time. I finally decided to make it for myself for lunch when all the kids were at school. No one has the love of brie like I do,
To start, I made my favorite whole wheat pizza dough. It’s always the perfect vessel for any flavor of pizza. But, store-bought will suffice as well. This is a sauce-less pizza. The caramelized onions and melted brie are moist enough, and boast a lot of flavor. I forgot to cut the rind off the cheese, so it didn’t spread as well as it should have. But, it still tasted divine. This is a very simple, but delicious pizza for any brie lover out there. You won’t be disappointed!

- store bought dough, or homemade
- 2 teaspoons vegetable or grapeseed oil or butter
- 2 large yellow onions, peeled and thinly sliced
- 1 1/2 teaspoons red wine vinegar
- 1 1/2 teaspoons sugar
- 1/8 teaspoon salt
- 8 oz. brie cheese, rind removed and cut into cubes
- 1/4 cup sliced almonds
- freshly ground pepper
- Preheat the oven to 425ºF. If you have a baking stone, let it warm in the preheated oven for 30 minutes. If not, then have an upside down baking sheet ready.
- In a large skillet over medium-high heat, heat the oil until shimmering. Stir in the onions red wine vinegar, sugar and salt. Cook, until the onions are golden brown, adjusting heat as needed and stirring often, about 20 minutes. Remove from the heat and let cool slightly before assembling pizza.
- Roll out pizza dough on parchment paper. Sprinkle the onions over the dough evenly. Then, place the brie cubes evenly over the onions. Spread the almonds evenly over the top and season with fresh pepper.
- Transfer the prepared pizza to the baking stone, or reversed baking sheet. Bake for about 15 minutes, or until the cheese is melted and the crust is golden brown. Serve.
