
A few months ago, my two sisters and I took a quick weekend road trip to Massachusetts to visit an ailing aunt. We stopped in Portland for lunch on the way down. I always thoroughly enjoy traveling with my sisters because they always are able to find these amazing food places that are completely inconspicuous and out of the way. Needless to say, I always eat well when I travel with them. Anyway, we stopped at this bagel/lunch place to grab some bagel sandwiches. Doesn’t sound the most exciting, I know. But let me tell you, I haven’t been able to get that sandwich out of my head ever since I ate it back in January. It was that damn good. I have been determined to recreate it, but just didn’t have the time until recently. I was first determined to make my own bagels first. I couldn’t make a bagel sandwich without homemade bagels! So, a few weeks ago I finally put some time aside to make bagels and these sandwiches.


I know that the sandwiches seem pretty simple it’s almost silly. But let me tell you, the flavor and satisfaction is anything but silly. Homemade garlic hummus is slathered over a homemade bagel, then topped with ribbons of carrots and cucumbers, slices of avocado, then, because that isn’t enough, bacon tops it all off. This is no one sided sandwich either. Open faced, both sides of the bagel get full attention. Filling, incredibly satisfying, and so, so worth the time. You could prep the vegetables, hummus, and bacon on Sunday for a week of sandwiches. Just slice the avocado right before serving, because of course, it will brown. So, go make some bagels, because we all know these sandwiches are worth it.

Hummus, Veggie and Bacon Bagel Sandwiches
Bagel sandwiches at a whole new level. Smeared with hummus, then topped with carrot strips, spinach, bacon and avocado. This makes lunch exciting again!
Ingredients
- 1-2 large seedless english cucumbers
- 2 large carrots, peeled
- 2 ripe avocados, sliced into thin pieces
- 6 slices thick cut bacon, cooked
- garlic hummus
- bagels
Instructions
Using a vegetable peeler, slice the cucumber and carrots into thin strips. Slice bagels in half. Slather hummus over flat sides of the cut bagels. Top with carrots, cucumbers, bacon slices, and avocado. Serve and devour immediately.
