
Guacamole is something that I didn’t like until I was probably in my teenage years. The first time I really fell in love with it, is when my dad had an office party and it was a recipe exchange. Someone brought guacamole. I am pretty sure that I sat next to the dip most of the night chowing down with tortilla chips. It was that good. Ever since then I have been using that recipe. Pita chips and tortillas are a wonderful dipping vessel. These would make a perfect addition to any Super Bowl party! Woot woot. What team is everyone rooting for? Since the Patriots played a terrible game against the Bronco’s and didn’t make it into the Super Bowl, I am not rooting for anyone. I think it will actually kind of make the game more exciting! (Not that I know a darn thing about football-ha! At least my husband and dad do though.)

Quick and Easy Guacamole
Creamy guacamole made with just a few ingredients. Easy yo throw together and will be a crowd favorite on the appetizer table.
Ingredients
- 2 ripe avocados
- 1 small onion, grated
- 2-3 Tablespoons fresh lemon juice
- 1/2 teaspoon salt
Instructions
- Peel and mash the avocados in a small bowl. Mix in the onion, 2 tablespoons lemon juice and salt. Taste, add more lemon juice and/or salt if desired. Serve immediately. (Avocados, like apples, will go brown when exposed to air, but it doesn't mean it's bad! It just means it should be prepared directly before serving.)
